the stories behind our creations
Pour les plus beaux moments...
Our tiramisu, like all of our cakes at Faonette, is completely handmade in our kitchen
We start with soft genoise sponge, gently soaked with fresh espresso and a generous splash of amaretto
Then we layer a rich and silky mascarpone cream made with egg yolk and a little more amaretto
While many recipes avoid eggs for safety reasons, we carefully heat the yolks over a bain-marie to pasteurise them, preserving their natural richness and depth of flavour
The process is repeated in delicate layers of sponge and cream, building softness and structure in every spoonful
Each individual cup is finished with a careful balance of bitterness, creamy softness, and gentle sweetness
The result is an elegant, comforting dessert with real depth and harmony

This was the very first of our Grand Tiramisu Wedding Cakes – a show-stopping 80cm in diameter, lovingly made for a very special day
The venue was absolutely breathtaking, and the bride was incredibly beautiful on the day (as you can see in the photo!) – even more so than I had imagined from our lovely email exchanges✨
I feel so honoured that my creation could be part of such an elegant and beautiful celebration💍

14 dec 25 what is strawberry shortcake?
The term shortcake originally referred to a cake made with shortening - a type of fat - which created a crumbly, “short” texture. This meaning comes from older American baking traditions in the late 19th and early 20th centuries
Over time, American restaurants began serving versions with sponge cake, cream and strawberries but the iconic style we know today is largely a Japanese creation
Development in Japan
While Western-style cakes were introduced to Japan in the late 19th century, it was local pastry chefs in the early 20th century who popularized the version made with soft sponge, whipped cream, and strawberries.
With the spread of refrigerators in the mid-20th century, the lighter-textured whipped cream replaced the heavier buttercream, making the soft, fluffy strawberry shortcake we know today possible
Strawberry shortcake became a symbol of Christmas in Japan especially after World War II, as refrigeration and greenhouse farming made strawberries available even in winter
In the 1970s, companies like Fujiya helped popularize the cake as a Christmas cake, making it a seasonal tradition. Beyond holidays, its pleasing balance of flavors and festive look also made it a favorite birthday cake
Strawberries were chosen for both aesthetic and taste reasons:
The bright red of strawberries contrasts beautifully with white whipped cream, creating a festive, celebratory look
The sweet-tart flavor complements light sponge and whipped cream
In Japan, the red-and-white pairing also evokes cultural symbolism similar to Japan’s national flag, making it suitable for celebrations
Born in Japan and cherished for generations, strawberry shortcake is a cake of delicate beauty and balance.
As a British patissiere with Japanese heritage, my aim is to introduce this truly delicious Japanese cake to a wider audience here in the UK, so more people can experience its simple elegance...
With Love,
Angelica Rose

After creating our first Tiramisu Wedding Cake at the beautiful Kin House a few months ago, we've had so many enquiries for it
Next year we’re already heading to Gosfield Hall, Blue Tin Produce and Syrencot, and there are a few more quotes out too - so who knows where we'll be next!
Our Strawberry Shortcake is another great option as a table cake, but so many other fruits can be used for it too
And yes, we still do traditional wedding cakes as well. But even those won’t be the “standard” ones you see everywhere… they’ll have that little Faonette touch - elegant and slightly unexpected, very us✨
With Love,
Angelica Rose
29 jul 25 great taste awards winners announced (and we are one of them)
We’re thrilled to have been awarded a Great Taste ★ for our Strawberry Shortcake — and proud to be the only cake business in Oxfordshire & Berkshire to receive one this year✨
We were hoping for a higher achievement but are still proud of this milestone and grateful to the judges for their thoughtful feedback which can be found below:

"This very attractive ivory coloured cream cake has beautiful swirls on top and stunning quality fresh strawberries. It is beautifully light to cut and holds its form very well. The genoise sponge is very light, but we couldn't discern any brandy syrup. The strawberries have held their own in the filling and give some appealing contrasting texture and flavour. The cake is well balanced, and despite all the cream, is not overly sweet. Very well executed"
"A beautiful looking cake, this is massively creamy with lush bright red strawberries adorning it. Moist crumb, light and with that definite brandy hit, and then the more tart fruit, freshly complementing all of it. The generosity comes across in the flavour, which is well judged in terms of sweetness, and has a good mouthfeel too. We appreciated the delicacy"
"A delicate looking sponge in several layers. The strawberries look fabulously fresh and have kept their vibrant red colour even when sliced and layered between the sponge. The layers are light and airy and have a great flavour from the brandy syrup. The delicious fresh strawberry flavour marries beautifully with the brandy and beautifully soft sponge. The cream is carefully whipped and has kept its shape well. Sugar levels are well balanced. This is a great cake that feels is light as air when you eat it"
"This is such a pretty looking cake with its ripples of fresh cream and strawberries on the top and layers of sponge, strawberries and cream throughout. On tasting, it melts in the mouth. The genoise is so light, the cream is fluffy and fresh and the strawberries are sweet. This is so delicate and very pretty"
